Easy to make, lemon flavoured fried egg cake. Amazing if you want to prank someone!

Ingredients

Cake:

3 eggs

60g of wheat flour

60g of potato flour

100g of sugar

1 teaspoon of baking powder

1 tablespoon of water

Cream:

1kg of cream cheese

250 ml of whipping cream (cooled)

4 tablespoons of powder sugar

Juice squeezed out of 2 lemons (or less, depends of how sour you want the cream to be)

154 g of transparent lemon jelly and 500 ml of boiling water

Decoration:

A jar of apricots

154 g of transparent lemon jelly and 750 ml of boiling water

Grated lime zest (optional)

Preparations:

Separate egg whites and egg yolks.

Beat the egg whites till stiff, then add sugar and the yolks.

Turn the speed of the mixer down and add flours, baking powder and water.

Pour the mixture into a cake pan (mine is 24 cm x24 cm) and bake in preheated oven in 180C for 20 minutes.

Let the cake cool down.

Pour whiping cream into the mixer bowl, whip till it becomes thick and put the cream into a different container.

Dissolve jelly in 500ml of boiling water, mix thoroughly and put away to cool down but don't let them set.

Put cream cheese into the mixer bowl, add powdered sugar and mix everything.

Pour in lemon juice and cold but still runny jelly

Finally add the cream you whipped earlier.

When the cream starts to thicken pour it onto the cake.

Drain off apricot halves and line them on the cake.

Dissolve jelly in 750 ml of boiling water, mix thoroughly and put away to cool down but don't let it set.

Pour the cold but still runny jellies on top using a spoon so the layer underneath doesn't get damaged.

Put the cake in the fridge for about 30 mins.

Decorate with grated lemon zest.

And voila! We're done! :-)
